Enchilada Lasagna
I love me an enchilada. As long as there is no corn tortilla-only flour...so basically only when I (or my step mommy) makes it.
Ingredients
2 lbs hamburger
2 tbsp Minced onion
2 tsp Garlic Salt
2 tbsp Taco Seasoning
2 tsp Cumin
1 (8 ounce) can of enchilada sauce
1 (4ounce) can tomato sauce
1 can drained black beans
Tortillas
Mexican shredded cheese
Black olives (optional)
Salsa (optional)
Sour Cream (optional)
Cilantro
Brown hamburger with minced onions and garlic salt.
Add taco season, cumin, enchilada sauce, tomato sauce, and black beans (I've also been known to dice some of the black olives and throw them in)
Spray baking dish.
Layer meat, cheese, tortillas; repeat. (sometimes I do 2 layers; sometimes 3).
Bake at 400 degrees for 25 minutes.
When you take it out; sprinkle some fresh chopped cilantro over. Serve with salsa, black olives and maybe some sour cream to taste :-)
4Star--both older children eat it reluctantly; half a star each; the baby, mom and dad inhale the rest!
