Mac and Cheese

This is our STAPLE.

A copy cat for Noodles and Co. Mac and cheese!


Ingredients:
1/4 cup butter
1/4 cup flour
3 cups 2% milk*
3 cups shredded montery/colby cheese (for sauce)
1 cup shredded cheddar to sprinkle on top at end.
1.5 lbs elbow macaroni

Boil the macaroni to al dente.

In a sauce pan; melt butter.
Add flour to the melted butter and whisk together over medium heat, making a rue.
Add in milk, continue whisking together.   Cook over milk till it heats and condenses some.
When milk is warm enough; add in shredded cheese.  Stir together till melted and remove from heat.

Drain noodles.
Place desired amount of noodles in bowl and add a laddle of the cheese sauce to the bowl.  
Sprinkle some shredded cheddar over the top.
Serve.  **


*You can use whipping cream but its really creamy then, whole milk could be a good middle ground; in a pinch I've even used skim
**In a hurry; I've dumped the sauce over the whole thing of noodles and mixed together; my children don't appreciate the fancy serving like I do.
