Pork Chops and Rice
Tonight; we kept it simple. I wanted comfort (as Kev and I are both feeling under the weather) and I decided to pick up some meat from our new local grocery store because I heard wonderful things about the food itself, the wonderful service behind that counter, and also the prices.
My mom always made Pork Chops with cream of mushroom soup and baked them. YUM. But I wanted some rice too....so alas; I googled "baked pork chops and rice" and I found a random recipe and decided to twist it to work for us.
Ingredients:
4 pork chops
1 cup long grain white rice (uncooked)
1 1/2 cup water
2 cans cream of mushroom soup
Onion salt
Salt
Pepper
Stir together: 1 cup of rice, 1 1/2 cups of water, and 1 - 1 1/4 cup of cream of mushroom soup. Sprinkle in some onion salt and stir together.
Put this in the bottom of a baking dish (at least 3 quarts).
Next season the pork chops with salt and pepper (just a bit will do-you can always add more later). Place the pork chops on top of the mix. (They may sink into it a little; this is okay.)
Now take last of the cream of mushroom and dallop over the tops of your chops.
Cover them and bake for 1 1/4 hours at 350 degrees.
Even my picky eater ate these and the rice (he hates rice!).

CalorieCount: The rice mix and cream of mushroom total about 935 total; I divided that into about 6 servings and it is 155 a serving. Add in a pork chop, depending on the cut you use; I used a boneless loin chop and rounded it up to 175 calories. So my total for tonight was only 330 calories :-) YUMMYYYYYY.
