Chicken Pie

I got this recipe from a friend and have "tweaked it" so it works for us. Ingredients: 3 chicken breasts (cooked and shredded) 2 cans cream of celery 1+cup of chicken broth 2 box pie crusts 1 bag of frozen mixed veggies In a greased 9*13 pan; place one and 1/2 pie crust on the bottom to cover.   Add chicken, broth, veggies.   Spoon soup cans over top. Lattice another 1 1/2 pie crusts over the top. Rub melted butter on top to crisp the crust. Bake @ 325 for 1 hour.   5Star--who doesn't love a good pot pie!

Chicken Spagetti

I love something simple and in a crockpot.   This one is a GOOD one.   My aunt makes the recipe and bakes it; and hers she skips the rotel so it doesn't have any kick.  But even my kids like it with the kick! INGREDIENTS: 1 lb velveeta cheese (cubed) 1 can cream of mushroom 1 can cream of chicken 1 4 ounce can of mushrooms (drained)--sometimes I double this 1 can rotel (Diced tomatoes and green chilies) 2 cups of chopped cooked chicken (or I use one large can of chicken) 1/2 cup of water 1 16 ounce box spaghetti noodles cooked Spray crock pot with cooking spray. Put all ingredients in crock pot and cook on low for 2.5-3 hours (till the cheese is melted and everything is warm). 5 Stars--We all clean our plates for this one! CALORIE COUNT:   This is assuming ou use 98% fat free soups, 2% velveta and regular noodles.   It makes about 10 cups total.    One cup serving is 330 calories.    Good luck eating just one serving though...

Pad Thai a la ramen

So I found this Ramen Noodle upgrade from Martha Stuart.   It looked good so I tried it.   But; it wasn't ideal.  I found it too peanut butter-ey.   Now I'm not saying I'm better than Martha....I'm just saying MY recipe and adjustment improve it.    So try it..... Ingredients 1 package Ramen noodles and flavor 1 tablespoon soy sauce 1 tablespoons peanut butter 2 teaspoons Sriracha chili sauce Cilantro (optional)    Directions Boil noodles with flavor pack and drain off most liquid; be sure to leave a little or it gets dry. Toss with soy sauce, peanut butter, and Sriracha. Garnish with cilantro. Eat immediately. 2 Stars--its got Sriracha in it; I didn't even attempt to have the children eat this.  But it sure is GOOD!   

Enchilada Lasagna

I love me an enchilada.   As long as there is no corn tortilla-only flour...so basically only when I (or my step mommy) makes it. Ingredients 2 lbs hamburger 2 tbsp Minced onion 2 tsp Garlic Salt 2 tbsp Taco Seasoning 2 tsp Cumin 1 (8 ounce) can of enchilada sauce 1 (4ounce) can tomato sauce 1 can drained black beans Tortillas Mexican shredded cheese Black olives (optional) Salsa (optional) Sour Cream (optional) Cilantro Brown hamburger with minced onions and garlic salt. Add taco season, cumin, enchilada sauce, tomato sauce, and black beans (I've also been known to dice some of the black olives and throw them in) Spray baking dish. Layer meat, cheese, tortillas; repeat.  (sometimes I do 2 layers; sometimes 3). Bake at 400 degrees for 25 minutes. When you take it out; sprinkle some fresh chopped cilantro over.   Serve with salsa, black olives and maybe some sour cream to taste :-) 4Star--both older children eat it reluctantly; half a st...

Enchilada Soup

Okay; this is my pot luck go to and my in-a-hurry-because-my-husband-doesn't-think-a-sandwhich-is-a-full-meal option.    Its by no way going to get me points for being The Next Iron Chef.   But its good.   And easy.  And lets be honest; sometimes we just NEED that. Ingredients 2 cans cream of chicken 2 cans nacho fiesta cheese soup 1 can of milk 1 can of enchilada sauce (mild with the kids; medium without) 3 small or one big can of shredded chicken; drained and chopped Throw in the crockpot (or on the stove) and heat until warm. YUMMY 5Star: if I use mild they all eat it.   If I use medium its just me and the hubs.

Tequilla Lime Chicken a la Ree

This recipe is one I found watching Pioneer Woman on the Food Network .   (Clicking the food network link will get you the original recipe). Its soooo dang good.    I did change the order in which she tells us to make it; just because; well I found if I added the tequilla when she did; it make the marinade foamy.  I didn't like that.  And I also changed her fresh garlic cloves to minced garlic, because thats how I roll.  I don't keep kosher salt on hand; so sea salt it was.  And sliced cheese because I'm just not grating any.      Ingredients 4 limes 1 cup tequila 1/4 cup olive oil 2 tsp sea salt 2 tbsp minced garlic 1 jalapeno, sliced (seeds in for spicy; out for less) 1/2 bunch chopped fresh cilantro 12 boneless, skinless chicken breasts 12 slices Monterey jack cheese Directions Slice open the limes and squeeze the juice into a food processor or blender.  Add the garlic, salt, jalapeno and olive oil a...

Zuppa Toscana.   This is my FAVORITE food of all time.    Its the biggest comfort food in my life.   When I was pregnant with our "baby" its the only thing I craved and I craved a LOT of it.  To the point she was nicknamed baby Zuppa for the 9 months prior to her arrival.   You can find Zuppa Toscona copy cat recipes all over online (this is an Olive Garden specialty incase you live in a box and didn't know this).  I've tried most of them; and thats were mine originated.   Even pioneer woman now has one.   And while I'd never speak ill of her recipes; I have to say I prefer mine.   I feel like mine tastes as close to the real thing as possible without adding the hard work some of the others do.  I love a shortcut when I can get one (minced onions; minced garlic and pre cooked real bacon pieces).    So here is MY variation of the soup that my soul sings for..... Makes: 6-8 servings INGREDIENTS 1 lb...

Mac and Cheese

This is our STAPLE. A copy cat for Noodles and Co. Mac and cheese! Ingredients: 1/4 cup butter 1/4 cup flour 3 cups 2% milk* 3 cups shredded montery/colby cheese (for sauce) 1 cup shredded cheddar to sprinkle on top at end. 1.5 lbs elbow macaroni Boil the macaroni to al dente. In a sauce pan; melt butter. Add flour to the melted butter and whisk together over medium heat, making a rue. Add in milk, continue whisking together.   Cook over milk till it heats and condenses some. When milk is warm enough; add in shredded cheese.  Stir together till melted and remove from heat. Drain noodles. Place desired amount of noodles in bowl and add a laddle of the cheese sauce to the bowl.   Sprinkle some shredded cheddar over the top. Oriental Chicken Wrap

Alright, in trying to figure out how to pin this recipe the exact way I made it; I had to blog about it first, because well I found a recipe online, read the reviews and then modified it to work for my lazy self. So here goes: ORIENTAL CHICKEN ROLL UP (Copy Cat Recipe from Applebees) Dressing: 6 Tbsp light corn syrup (or honey) 3 tbsp white wine vinigar 1/2 cup mayonaise 2 teaspoon dijon mustard 1/4 teaspoon seasame oil Other ingredients: 4 flour tortillas (burrito size) Tyson (or like brand) chicken tenders; 2-4 servings worth Bag of asian slaw (also called broccoli slaw, it contains shredded broccoli, cabbage and carrots) Chow Mein Noodles (about 1 cup-2 cups) Sliced almonds (1/4 cup) Start by mixing the dressing ingredients until smooth; and then chill them. Pork Chops and Rice

Tonight; we kept it simple.   I wanted comfort (as Kev and I are both feeling under the weather) and I decided to pick up some meat from our new local grocery store because I heard wonderful things about the food itself, the wonderful service behind that counter, and also the prices. My mom always made Pork Chops with cream of mushroom soup and baked them.  YUM.   But I wanted some rice too....so alas; I googled "baked pork chops and rice" and I found a random recipe and decided to twist it to work for us. Ingredients: 4 pork chops 1 cup long grain white rice (uncooked) 1 1/2 cup water 2 cans cream of mushroom soup Onion salt Salt Pepper Stir together: 1 cup of rice, 1 1/2 cups of water, and 1 - 1 1/4 cup of cream of mushroom soup.    Sprinkle in some onion salt and stir together.   Put this in the bottom of a baking dish (at least 3 quarts). Next season the pork chops with salt and pepper (just a bit will do-you can always add more later). ...

I am not always a good blogger.  I know this.   I don't expect to become someone who does it for a job but for me; its a place to journal and keep things I like to remember.   My aunt told me I should start a blog to keep my recipes.   I feel bad about that idea; since most of my recipes start as someone elses (a whole lot from Pioneer Woman-Ree Drummond) but alas; I've decided I'm going to do this.   If only for myself.  To have a spot to come and find my recipes.   Because lets be honest a recipe book is so 1900's.   And I'll try to give credit where credit is due.
