Italian Sausage Lasagna

I had some fantastic lasagna this weekend at my girl Linnea's wedding.   I decided to study some recipes online and tweek them to see if I couldn't make something similar.  Here's how it goes down.... Ingredients Sauce: 2 lbs italian sausage 2 tablespoons minced garlic 2 tablespoons minced onions 1 15 ounce can of tomato sauce 1 teaspoon red pepper flakes *mushrooms optional--1 can or 1 small sliced crate Cheese mixture: 1 egg 3 cups ricotta 2 tablespoons parsley flakes 1 tablespoon minced garlic 1/8 cup grated parmesan 1-2 cups mozzarella cheese 4-12 lasagna noodles HOW TO: Brown sausage.  Add in garlic and onion as you brown.  Drain if needed.   Add tomato sauce, red pepper flakes and mushrooms*.  Simmer for about 20 minutes while you cool lasagna noodles. Beat egg and add in ricotta.  Stir together.  Add in parsley, garlic and parmesan. When ready preheat oven to 350.   Put about 1/3 of the sauce in the botto...

Cauliflower Fried Rice

1 tablespoon coconut oil (or olive oil) 1-2 tablespoons mixed garlic 1 bag cauliflower rice (or one head of cauliflower riced) 1 cup frozen or fresh green beans 1/2 cup shredded carrots 3 Eggs Salt Pepper 1 cup of coconut aminos Heat the oil over medium heat.   Add in the minced garlic and cook for about a minute.  If you are an onion person, you could add 1/4 cup chopped onion here too.  I am not.  But if you are, make it about 2 minutes of cooking. Add your riced cauliflower and cook an additional 5 minutes, stir frying frequently.   (If using fresh green beans, take this time to cook them for 2 minutes with a splash of water in the microwave.  If using frozen just go to the next step when ready).   Add green beans and carrots.  Fry for 2-3 minutes.   Make a well in the middle of the veggie mix.  In a separate bowl, whisk 3 eggs and add a touch of salt and pepper.  Pour these into the middle...

"Pad Thai"

Spaghetti Squash Pad Thai OMG this is AMAZING! Ingredients: 1 Large (or two small) Spaghetti Squash  (roasted; shredded) 1 tbsp extra virgin olive oil 2 tbsp minced garlic 1 cup chopped mushrooms 1 cup bean sprouts 1/2 cup chopped carrots 2-3 eggs Sauce: 3 tbsp coconut aminos 3 tbsp coconut aminos garlic sauce 3 tbsp rice vinigar 1 tsp red pepper flakes 1)  In large pan, heat EVOO.   Add minced garlic, mushrooms, sprouts and carrots.  (Onions and scallions optional! I skip these!)  Stir fry them for about 3 minutes.    Add in 2 chicken breasts!  Cook chicken and veggies until chicken is cooked through.  (Could pre-cook chicken). 2)  Add about 3 cups of spaghetti squash and sauce.  Mix well. 3)  Make space in center of mixture.  Cook eggs in center and then scramble them and stir them into the mixture!    Serve! *next time I may add some snap peas for fun too! 4Stars!  Kid...

Sloppy Joes

Ingredients 2 lb ground beef 2 tbsp minced onions 1 15oz can tomato sauce 2 tablespoons tomato paste 3 tablespoon apple cider vinegar 2 tablespoon dijon mustard 1 tablespoon minced garlic 10 medjool dates, pitted 1.5 cup water (reserved) russet potatoes (one per person) Instructions Brown the ground beef in a large pan over medium/high heat and add the minced onion. Drain any excess grease Reduce the heat to medium and add the minced garlic.   Meanwhile, in a small pot, bring reserved water to a boil and add the dates. Boil 60 seconds, just long enough to significantly soften the dates. Remove the dates from the pot. Place the dates into a food processor or blender, then add tomato sauce, and tomato paste. Blend well.   Mix in apple cider vinegar, dijon mustard and then add to the beef mixture Wash and dry a russet potato.
