Sloppy Joes

Ingredients
  • 2 lb ground beef
  • 2 tbsp minced onions
  • 1 15oz can tomato sauce
  • 2 tablespoons tomato paste
  • 3 tablespoon apple cider vinegar
  • 2 tablespoon dijon mustard
  • 1 tablespoon minced garlic
  • 10 medjool dates, pitted
  • 1.5 cup water (reserved)
  • russet potatoes (one per person)
Instructions

  1. Brown the ground beef in a large pan over medium/high heat and add the minced onion. Drain any excess grease
  2. Reduce the heat to medium and add the minced garlic.  
  3. Meanwhile, in a small pot, bring reserved water to a boil and add the dates. Boil 60 seconds, just long enough to significantly soften the dates. Remove the dates from the pot.
  4. Place the dates into a food processor or blender, then add tomato sauce, and tomato paste. Blend well.   Mix in apple cider vinegar, dijon mustard and then add to the beef mixture
  5. Wash and dry a russet potato. Poke the potato with a fork or knife a few times, then microwave for 5-7 minutes, until potato is soft inside
  6. Serve sloppy joe mixture on top of baked russet potato.

This recipe was adapted to our families style of cooking but its Whole 30 approved and all of the kids LOVED the meat (though they prefer a bun to the potato!)
