Cauliflower Fried Rice





  • 1 tablespoon coconut oil (or olive oil)
  • 1-2 tablespoons mixed garlic
  • 1 bag cauliflower rice (or one head of cauliflower riced)
  • 1 cup frozen or fresh green beans
  • 1/2 cup shredded carrots
  • 3 Eggs
  • Salt
  • Pepper
  • 1 cup of coconut aminos

Heat the oil over medium heat.   Add in the minced garlic and cook for about a minute.  If you are an onion person, you could add 1/4 cup chopped onion here too.  I am not.  But if you are, make it about 2 minutes of cooking.

Add your riced cauliflower and cook an additional 5 minutes, stir frying frequently.   (If using fresh green beans, take this time to cook them for 2 minutes with a splash of water in the microwave.  If using frozen just go to the next step when ready).  

Add green beans and carrots.  Fry for 2-3 minutes.   Make a well in the middle of the veggie mix. 

In a separate bowl, whisk 3 eggs and add a touch of salt and pepper.  Pour these into the middle of the well.   Fry/scramble them; trying not to mix with the veggies until they are cooked through.  Once cooked; mix all of the pan up well.  

Season with 1/2 teaspoon pepper,  1/2 teaspoon garlic powder, and  coconut aminos (or Soy sauce for you non Whole30 people).

I grilled some chicken (marinated in coconut aminos) and cut that up to make it a meal :-)
