Pineapple Chicken

An interesting twist on some chicken.   I'm not sure why I thought I'd like this.  I don't eat peppers. I don't eat cooked pineapple.   But I do like chicken!   Either way, I'm glad I did, I enjoyed all the pieces and didn't pick anything out!    The one thing I didn't add that I will next time is sliced mushrooms!   


Ingredients
1 Jalepeno  (chopped)
1 green and 1 red pepper (seeded and chopped)
2-3 chicken breasts cut into bite sized cubes
1 large can of pineapple (about 2 cups of pineapple and 1/2 cup of the juice from the can)
1 cup low sodium chicken broth
1/2 cup sugar
3 tablespoons corn starch
1/2 cup apple cider vinegar
3 tablespoons soy sauce
Cooked Rice (optional)

  • Season your chicken with salt, pepper, and garlic powder.   
  • Heat small amount of olive oil (or coconut is good in this recipe) in skillet
  • Add Chicken.  Toss until they are cooked and starting to brown.
  • Add chicken broth, peppers, and pineapple chunks to skillet.  
  • Bring to a boil, then reduce heat and simmer, uncovered, about 10 minutes
  • While that simmers, combine sugar and cornstarch.  Stir in the vinegar, soy sauce and pineapple juice until it is smooth.
  • At end of 10 minutes, add the sauce mix into the skillet.
  • Bring to a boil and stir constantly for 2 minutes or until thickened.
  • Serve over rice!

    Somethings I may try in the future:  
    Instead of apple cider vinegar (boy does that smell) I though about almond milk
    Mushrooms!!!!!
    Onions are optional, but not for me.   
    A second jalepeno for heat!  

    ***4 Star, kids ate but only with lots of "do I have to's"  We loved
    ***21DayFixI measured into containers!  I ate 1 red (chicken), 1 green (peppers), 1/2 purple (pineapple), and 1 yellow (rice and sugars in sauce).
