Mexican Tator Tot Hotdish

This was fantastic!!!  Izze complained about a few too many peppers.  But everyone else ate all of it!   It is definitely a new favorite for us!   I mixed some ideas I found online.  Most of them called for 2 cups of corn as well (add when you add the beans) but I am anti corn in this house!

Ingredients


  • 2 lbs of ground beef
  • 2 tbsp minced onion
  • 2 tbsp minced garlic
  • 2 packs of taco seasoning
  • 1 can enchilada sauce (divided in half)
  • 1/2 of yellow, red and green pepper diced
  • 1 can of black beans
  • 4 cups of shredded colby or mexican cheeese  
  • 1 bag of tator tots
  • 1/2 cup of salsa


Optional Toppings:

*Shredded Lettuce
*Sour Cream
*Guacamole
*Tomatoes (diced)
*Black Olives


Directions: 

  • Preheat oven to 350
  • Brown the beef with minced onion and minced garlic until cooked through.  Drain.
  • Mix in taco seasoning according to package, 1/2 can enchilada sauce, peppers and beans.  
  • Cook about 5 minutes.
  • Put mixture into a cake pan.   Cover with about 2 cups of cheese. 
  • Line Tator Tots on top.   LINE THEM PEOPLE DO NOT POUR THEM!
  • Bake for around 30 minutes until tots are getting crisp.
  • Mix the salsa and the rest of the enchilada sauce.  Pour over tator tots and top with 2 cups of cheese.  
  • Bake another 10 minutes
  • Serve with your favorite taco toppings
