Chicken Burrito Bowl

Ingredients
  • 2 boneless skinless chicken breasts, cubed
  • 1 Tbsp olive oil
  • 3 green onions, chopped (separate the light and dark colored sides)
  • 2 teaspoons minced garlic
  • 1 1/2 cups chicken broth
  • 1-4 oz can chopped green chilies
  • juice of one lime
  • 1-14.5 oz can black beans, rinsed and drained
  • 2 cups instant white rice 
  • 1/2 cup chopped cilantro
Directions

  • ~Heat oil in a large skillet over medium/high heat 
  • ~Saute chicken until almost cooked through  
  • ~When about a minute left on chicken, add in light section of green onions and the garlic, and finish cooking chicken
  • ~Stir in chicken broth, green side of onions, can of green chilies, black beans and squeeze in lime juice.   Add salt and pepper to taste
  • ~Bring mixture to a boil
  • ~Add Rice make sure to stir the rice into the broth allowing a few seconds on the heat to make sure it is covered
  • ~Remove skillet from heat and cover.  Let skillet rest for about 5 minutes *until water is abosrbed
~Remove from heat and toss in cilantro.  
~Let rest about 3 minutes
~Serve  (by itself or in a wrap!)

*If broth is not absorbing....you can return pan to medium heat and stir fry for about a minute until moisture is gone.
