Chicken Burrito Bowl
Ingredients 2 boneless skinless chicken breasts, cubed 1 Tbsp olive oil 3 green onions, chopped (separate the light and dark colored sides) 2 teaspoons minced garlic 1 1/2 cups chicken broth 1-4 oz can chopped green chilies juice of one lime 1-14.5 oz can black beans, rinsed and drained 2 cups instant white rice 1/2 cup chopped cilantro Directions ~Heat oil in a large skillet over medium/high heat ~Saute chicken until almost cooked through ~When about a minute left on chicken, add in light section of green onions and the garlic, and finish cooking chicken ~ Stir in chicken broth, green side of onions, can of green chilies, black beans and squeeze in lime juice. Add salt and pepper to taste ~ Bring mixture to a boil ~Add Rice make sure to stir the rice into the broth allowing a few seconds on the heat to make sure it is covered ~Remove skillet from heat and cover.
