Chicken Burrito Bowl

Ingredients 2 boneless skinless chicken breasts, cubed 1 Tbsp olive oil 3 green onions, chopped (separate the light and dark colored sides) 2 teaspoons minced garlic 1 1/2 cups chicken broth 1-4 oz can chopped green chilies juice of one lime 1-14.5 oz can black beans, rinsed and drained 2 cups instant white rice  1/2 cup chopped cilantro Directions ~Heat oil in a large skillet over medium/high heat  ~Saute chicken  until almost cooked through   ~When about a minute left on chicken, add in light section of green onions and the garlic, and finish cooking chicken ~ Stir in chicken broth, green side of onions, can of green chilies, black beans and squeeze in lime juice.   Add salt and pepper to taste ~ Bring mixture to a boil ~Add Rice make sure to stir the rice into the broth allowing a few seconds on the heat to make sure it is covered ~Remove skillet from heat and cover.  Let skillet rest for about 5 minutes *until water is abosrbed...

Fruit Salsa

FRUIT SALSA! 2 kiwis (peeled and diced) 2 apples (Peeled cored and diced)  8 ounches raspberries 1 pound strawberries 2 tablespoons white sugar 1 tablespoon brown sugar 3 tables fruit presererves (I use any flavor jam I have on hand) ———————————————————— 10   10 inch flour tortillas Butter flavored cooking spray a cup of cimmanon sugar mix ~Oven at 350 degrees ~Spray flour tortilla with spray.   Sprinkle sugar/cinnamon mix on top, flip, spray and sprinkle again. ~THEN cut in wedges and spread on tray.  (Use pizza cutter for easy peasy cuts) ~Bake 8-10 minutes Eat.all.the.things
