Geek's Balls

I was thinking today, 99% of my favorite foods come from my uncles.  Not because my aunts are not great cooks but because my uncles are just the food pro's of the family....and we are a family of FOOD.   Here is one of my favorites!  I haven't made them in years, but I wish I had, because my children devoured them! Ingredients: 2 lbs of hamburger 2 packets of spaghetti sauce (1.5 oz dry packet like this but I use my local store brand) 2/3 sleeve of saltines, crushed 1 egg Mix all ingredients together.   Form into balls. Put olive oil in a frying pan and fry up meat balls so the outsides are mostly cook (insides are fine).  Basically you want these to be about 2/3 of the way cooked. Put balls into a cake pan and pour a can of tomato sauce over them.  Cover with foil and bake at 350 degrees for about 40 minutes. We eat ours over spaghetti noodles! This is a 5 star recipe.  My family LOVED them.

Peanut Pad Thai

OH MY GOODNESS. I've been eyeing up this One Pot Wonder Thai Style Peanut Pasta Recipe for a while now. We just had it and I find myself thinking WHY did I wait this long!   Needless to say, as I tend to do, I had to make my own kinks.   So here's how I do it! Ingredients: 16 ounces linguine  (lets be honest thats the size of the box...ain't got time for measuring it out) 4 cups vegetable broth 3/4 cup water 4 cloves minced garlic 1 tbsp brown sugar 1 teaspoon sriracha 1 tablespoon soy sauce 1/2 teaspoon red pepper flakes 2 inches of ginger root (peeled and left in long chunks) 1 large carrot, peeled and cut in 1/4 inch by 2 inch pieces 1 red bell pepper, cut in 1/4 by 2 inch pieces 3 green onions, sliced and cut 1 cup roasted salted peanuts (chopped) 2 tblsp peanut butter (These two items are for after cooking) ~~small bunch cilantro ~~two limes Directions: Place the top 14 items in a large pot.   Cover and bring to a boil.  Reduce...

Steak Tacos

Feeling a little chipotle today! I warmed up a can of black beans (drained and rinsed). I threw on some instant rice.   When it finished, I squeezed in a fresh lime and threw in a bunch of cilantro and some salt. Then, I grilled the steak.....(which had been marinated rub for about 15 minutes) They were DELISH! To make the rub:   1 teaspoon organo 1/2 teaspoon cumin 1/4 teastpoon garlic 1/4 teaspoon onion salt 1/4 teaspoon crushed red pepper pinch of salt and pepper Drizzle a little olive oil on steak and then put the rub on both sides.   Easiest supper EVER! 5 STARS ALL THE WAY
